This week, I got sick. Again. I feel like this is a common trend these days. The best thing we can do for ourselves is provide the nutrients and care our bodies require to heal. This soup is full of ginger, which warms and soothes the throat and stomach. The carrots and sweet potato provide vibrant color and grounding energy while being gentle on the digestion. If you find yourself under the weather, give this soup a try.



Ingredients
- 1 Tbsp. olive oil
- ½ onion, chopped
- 2-4 cloves garlic, chopped
- 1 thumb ginger, minced (thumb refers to about one inch in length of the ginger root)
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 8-10 medium carrots, peeled and chopped
- 1-2 medium sweet potatoes, peeled and chopped
- Salt and pepper to taste
- Sesame seeds (garnish)
- Scallions, chopped (garnish)
Method
- Heat the oil in a pot on the stove at medium heat
- Add the onion, garlic, and ginger to sauté
- Once the vegetables are soft, add the coriander, cumin, salt, and pepper
- After 2-3 minutes, add the carrots and sweet potato
- Stir to incorporate
- Cover vegetables with water and cover pot to bring soup to a boil
- Boil vegetables for 20 minutes or until they are fork-tender
- Blend soup with immersion blender
- Garnish with sesame seeds and scallions
- Serve and enjoy
