Kimchi Chickpeas

I have had this breakfast almost every day for the last six months. It has staying power. High in protein and probiotics and very filling, this one is a winner for me. I do use a kimchi sriracha product, but I have instructions here to make your own if you do not have any on hand.

Ingredients

  • ½ cup hummus, recipes here and here
  • ¼ cup chickpeas, cooked
  • 3 stalks celery, cubed
  • ¼ cucumber, chopped
  • ½ avocado, cubed (optional)
  • ½ cup kimchi
  • 1 Tbsp. sriracha
  • 1 drizzle sesame oil
  • Sesame seeds, garnish
  • Scallions, chopped, garnish

Method

  1. Add chickpeas, celery, cucumber, and avocado into a bowl
  2. Mince ¼ cup kimchi and combine with sriracha
  3. Add to chickpea mixture and combine
  4. Spread hummus onto plate
  5. Add chickpea mixture on top
  6. Top off with ¼ cup kimchi
  7. Drizzle with sesame oil and garnish with sesame seeds and scallions
  8. Serve with toast
  9. Enjoy
