I have had this breakfast almost every day for the last six months. It has staying power. High in protein and probiotics and very filling, this one is a winner for me. I do use a kimchi sriracha product, but I have instructions here to make your own if you do not have any on hand.



Ingredients
- ½ cup hummus, recipes here and here
- ¼ cup chickpeas, cooked
- 3 stalks celery, cubed
- ¼ cucumber, chopped
- ½ avocado, cubed (optional)
- ½ cup kimchi
- 1 Tbsp. sriracha
- 1 drizzle sesame oil
- Sesame seeds, garnish
- Scallions, chopped, garnish
Method
- Add chickpeas, celery, cucumber, and avocado into a bowl
- Mince ¼ cup kimchi and combine with sriracha
- Add to chickpea mixture and combine
- Spread hummus onto plate
- Add chickpea mixture on top
- Top off with ¼ cup kimchi
- Drizzle with sesame oil and garnish with sesame seeds and scallions
- Serve with toast
- Enjoy
