Pink Hummus

The world is in a pink phase right now. Barbie is supporting our economy, and I will gladly enter the internet following by posting pink content. This is yet another beet hummus recipe (I have another on this site already, but this one is prettier). Try it, love it, and bask in the pink of summer 2023.

Ingredients

  • 3 cloves garlic, whole
  • ½ red beet, cubed
  • 3 cups chickpeas, cooked
  • 3 Tbsp. tahini
  • Juice from ½ lemon
  • ¼ cup olive oil
  • 2 Tbsp. water
  • Salt to taste

Method

  1. In a food processor, add the garlic and beets and mince
  2. Add the chickpeas, tahini, lemon juice, and salt to the mixture
  3. Blend until smooth
  4. While blending, pour the olive oil and water in to emulsify the mixture
  5. Add more water to reach desired consistency
  6. Garnish with sesame seeds
  7. Serve and enjoy
