Sometimes I want some chicken nuggets but can’t be bothered to get them at the store. Instead, I make this overly-complicated recipe as a replacement and congratulate myself for being lazy and staying home. I hope y’all enjoy.
Ingredients
- 2 cups chickpeas, cooked
- ¼ onion, roughly chopped
- 3-5 cloves garlic, minced
- ½ red bell pepper, chopped
- 1 tsp. cumin, ground
- 1 tsp. coriander, ground
- ½ – 1 cup oats
- Salt and pepper to taste
Method
- Preheat oven to 400°F
- In a food processor, use the S-blade to mince onion, garlic, and bell pepper
- Add chickpeas and spices
- Pulse until well-blended
- Add oats in batches and pulse
- If the mixture is not sticky enough to form balls, add oats to reach desired consistency
- Form mixture into balls and place on parchment paper-lined baking sheet
- Bake for 15-20 minutes
- Serve and enjoy
